Simon learned the art of distilling and his passion for nature and the knowledge of indigenous fynbos enabled him to ethically source the most suitable local botanicals to flavour gins. Along with a spirits range under the name 5 Pence, he decided to develop a non-alcoholic range using the process of dry distillations, extracting herbal flavours through their distillation in a liquid wash of spring water.
